SUNNY VEGETABLE COMBO | |
3 sm. zucchini 3 tomatoes, sliced thick 4 tbsp. butter 2 tbsp. Parmesan cheese 1 tsp. onion salt 1/4 tsp. basil 1 1/2 c. soft bread crumbs 1 tbsp. mustard Thinly slice zucchini. Arrange in shallow 2-quart casserole. Top with 3 thickly sliced tomatoes. Melt 4 tablespoons butter. Combine 3 tablespoons butter, 2 tablespoons Parmesan, cheese, 1 teaspoon onion, salt, and 1/4 teaspoon basil. Cover and bake at 375 degrees for 20 minutes. Combine remaining butter with 1 1/2 cups soft bread crumbs and 1 tablespoon of mustard. Cook uncovered 15 minutes. Yield 4 servings. |
