FETTUCINI ALFREDO 
1 pkg. frozen homemade fettuccine noodles
6 tbsp. butter
1 c. sour cream
1 c. heavy whipping cream
1 1/3 c. parmesan cheese (be sure its fresh or it won't melt)
2 tbsp. finely snipped chives
Dash of salt and pepper
Dash of nutmeg

Cook noodles as directed, drain and set aside. Melt butter in large saucepan, add sour cream and stir over low heat for 1 minute. Stir in cream and continue cooking slowly for 5 minutes, stirring occasionally.

Add cheese, and spices, and chives. Stir until cheese melts. If cheese is not fresh it will be grainy, there is nothing you can do about it at this point, because it simply will not melt. When purchasing, be sure it is whiter in color as opposed to dark yellowish. Remove from heat and pour over noodles. Makes 4 servings.
