INDIVIDUAL CHEESE CAKE 
2 (8 oz.) cream cheese (lite works too)
3/4 c. sugar
2 eggs
1 tsp. vanilla
vanilla wafer cookies
1 can cherry pie filling

Beat cream cheese; blend in sugar until smooth. Add eggs and vanilla. Line muffin tins with cupcake liners. Place one cookie in each liner, flat side down. Put about 2 tablespoons cream cheese mixture on each cookie.

Bake at 350°F for 15 minutes.

Makes 2 dozen. Use cherry pie filling for garnish.
