CHILLED STRAWBERRY PIE | |
3 egg whites 1 c. sugar 1 tsp. vanilla 1 c. buttery cracker crumbs 2 c. sliced strawberries 1 c. chopped pecans 1 c. whipping cream 2 tbsp. powdered sugar Beat egg whites until they form soft peaks. Gradually add sugars and vanilla until stiff peaks form. Fold in cracker crumbs and pecans. Spread mixture in buttered 10-inch pie pan, spreading sides slightly higher. Bake at 350 degrees for 30 minutes or until lightly browned. Cool completely. Beat whipping cream until foamy, gradually adding powdered sugar and beating until soft peaks form. Fold in strawberries. Spread in pie shell. Garnish with whole strawberries if desired. Chill at least 4 hours before serving. |
