FANCY MASHED POTATOES 
6 potatoes, cooked & drained
3/4 c. milk
3/4 tsp. salt (or less)
1/3 c. grated cheese
2 tsp. Dijon mustard (others work well too)
1/4 c. chopped green onions
2 egg whites

Add milk and salt to potatoes and mash until smooth. Add cheese, mustard and green onions to the mashed potatoes. Mix well. (If preferred, can be served at this point.) Place in lightly oiled 1 1/2 quart baking dish. May be prepared to this point and be refrigerated.

Just prior to baking, preheat oven to 375 degrees. Beat egg whites until very stiff and spread over potatoes. Bake 50-60 minutes and serve immediately. Children love this one!
