LEMON CAKE | |
1 box two-layer yellow cake mix 1 (3 oz.) box lemon gelatin (use dry) 4 eggs 3/4 c. cooking oil 3/4 c. water Mix all ingredients into a bowl and beat together with an electric mixer for 10 minutes. Pour the batter into the tube pan and bake for 1 hour. Preheat the oven to 350 degrees. Grease and flour the bottom and the sides of a tube pan. GLAZE: 2 c. powdered sugar 1/2 c. fresh lemon juice Mix together. As soon as the cake is done, leave in the pan and poke the cake all over the top with a fork. Spoon the glaze over the top of the cake while it is still warm. Let cake set in the pan two hours to allow it to absorb the lemon glaze. Before serving, set in a cool place. |
