CREAMED EGGS 
3 tbsp. butter
3 tbsp. flour
2 c. milk
Salt and pepper
10-12 hard boiled eggs

Melt butter in large saucepan. Add flour, blend quickly. Add milk a little at a time to make cream sauce. Chop hard boiled eggs. Add to sauce. Salt and pepper to taste. Serve over toast, biscuits or baked potatoes. Optional: add diced ham.
