SPINACH SOUP | |
1 sm. onion, peeled & quartered 1 med. potato, peeled & quartered 2 c. chicken broth 1 (10 oz.) pkg. frozen spinach 1/4 tsp. thyme 1/2 tsp. salt 1/8 tsp. pepper Croutons & grated Parmesan cheese for garnish In food processor with steel blade, chop onion and potato. Combine with chicken broth in medium saucepan. Cover and cook until potato is tender. Add frozen spinach and continue cooking 5 minutes more. Cool slightly. Return mixture to processor bowl with steel blade. Add seasonings and process until smooth. Serve either hot or cold, garnished with croutons and Parmesan cheese. Makes 4 servings. |
