COFFEE CAKE 
4 eggs
1 c. sugar
1 c. salad oil
2 c. flour, sifted
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. vanilla
1 can pie filling (I use apricot, blueberry, peach or cherry)
sugar and cinnamon

Beat eggs. Add remaining ingredients (except pie filling and sugar and cinnamon). Mix ingredients well. Put half of batter in greased 9 x 13 pan. Over this pour pie filling. Top with the rest of the batter. Sprinkle with a little sugar and cinnamon before putting into the oven.

Bake at 350°F for 30 minutes or until set. This can be divided into two 8 x 8 pans to make two smaller cakes. This is Florence Gerke's recipe. Everyone loved this one when Florence made it with apricot and took it to Home Extention to be auctioned off.
