CRANBERRY PORK ROAST 
4 lb. pork roast, preferably boneless
Salt & pepper to taste
1 (16 oz.) whole sweetened cranberries
1/4 c. chopped onion
3/4 c. orange juice
1/4 tsp. each ground cinnamon & ginger

Rub roast with salt and pepper. Place on rack in baking pan. Roast at 325 degrees for 2 1/2 to 3 hours, or until inserted meat thermometer registers 175 degrees.

In meantime, combine all remaining ingredients in saucepan and bring to a boil. Remove from heat. Halfway through roasting process, begin basting roast every 15 minutes with cranberry mixture. Remaining sauce can be served with the thinly sliced pork.
