THIMBLE COOKIES 
1/2 cup butter
1/4 cup sugar
1 egg, separated
1 tsp. flavoring
1 cup sifted flour
nuts chopped finely

Cream butter, add sugar gradually and mix well. Add well beaten egg yolk, flavoring, and flour. Shape into balls about the size of a walnut. Dip in unbeaten egg whites, then in finely chopped nuts. Dent in center with a thimble. Place on baking sheet and bake at 350°F for five minutes; dent again. At Christmas, can put cherry in dent.

Bake 12-15 minutes.

Can leave the dents unfilled and put a dot of jelly in each one when you serve them.
