SPAGHETTI WITH SHRIMP SAUCE A LA
GREGORIO
 
1 lb. spaghetti, cooked as box directs
4 tbsp. oil
2 med. onions, chopped
1 clove garlic, minced (optional)
1 to 1 1/2 lb. fresh shrimp, shelled and cleaned
1 sprig parsley, chopped

Cook onions and garlic in oil over medium heat until onions are translucent. Saute shrimp in oil and onion mixture for 5 minutes. Add 1/4 cup water or a little more to barely cover shrimp. Reduce heat, cover, simmer 20 minutes.

Last 5 minutes of cooking, add parsley and pepper and salt to taste. Serve over linguini.
