LADY BIRDS' PEDERNALES RIVER
CHILI
 
4 lbs. chili ground meat
1 lg. onion
2 cloves garlic, crushed
1 tsp. ground oregano
1 tsp. cumin seed
2 tbsp. chili powder, or more to taste
2 (10 oz.) cans Rotel tomatoes with chili peppers
2 c. hot water
Salt to taste

Combine chili meat, chopped onion and garlic in large heavy boiler. Sear until light colored. Add oregano, cumin, chili powder, salt, tomatoes and water. Bring to a boil. Lower heat and simmer about one hour. As fat cooks out, skim off. Makes 8 servings. Serve over rice.
