LAYERED BEEF AND ZUCCHINI 
1 lb. ground beef
3 or 4 sm. zucchini, sliced
1/4 c. Bisquick
2 c. of your favorite spaghetti sauce
1 c. small curd cottage cheese
1 egg
1/2 c. grated Parmesan cheese
1 c. Bisquick

Heat oven to 350 degrees. Grease a 9 x 9 x 2 inch pan. Cook ground beef and drain. Mix with spaghetti sauce. Place zucchini slices in bottom of pan. Sprinkle with 1/4 cup Bisquick, cottage cheese and egg until soft dough forms. Spread over beef. Sprinkle with Parmesan cheese. Bake uncovered until hot and bubbly, about 30 minutes. Let stand 5 minutes before serving.
