CAULIFLOWER - BROCCOLI SALAD | |
2 c. chopped cauliflower 2 c. chopped fresh broccoli 1 sm. can mushrooms, sliced (optional) 1 can sliced water chestnuts 1/2 c. finely chopped carrots 1 c. chopped celery 1 c. chopped cheddar or Colby cheese Mix all ingredients and dress with Italian dressing or make your own: 1 tsp. garlic salt 1 tsp. dry mustard 2 tsp. grated onion 1/3 c. apple cider vinegar 1 c. salad oil 1 tbsp. celery seed Combine sugar, garlic salt, mustard, onion and vinegar in blender. Add oil slowly while blender is mixing until stable emulsion is formed. Add celery seed; mix and refrigerate. Let stand a few hours before using. You may use any vegetable in this salad that can be eaten raw. Serves 6-8. |
