ICE CREAM COOKIE SANDWICH 
1/2 c. shortening
1/2 c. peanut butter
1 tsp. vanilla
3/4 c. sugar
3/4 c. brown sugar
2 eggs
1 tsp. baking soda
1/2 tsp. water
2 c. flour
6 oz. pkg. chocolate or peanut butter chips

Cream shortening, peanut butter, sugars, vanilla and eggs together. Add remaining ingredients except chips, mix well. Add chips. Drop by spoonful onto greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Cool. Fill with vanilla ice cream. Makes 2 1/2 dozen. Enjoy!
