PUMPKIN PIE 
1 1/2 c. pumpkin
1 c. sugar
3 eggs
1 tbsp. cornstarch
4 tbsp. butter, melted
1 c. evaporated milk
3/4 tsp. pumpkin pie spice
1/2 tsp. cinnamon
3/4 c. pecans, chopped, (optional)

Mix all ingredients and cook until thick; chill. Bake pie crust; add chilled pumpkin mixture. Just before serving top with Cool Whip or whipped cream.
