PUMPKIN BREAD | |
1/3 c. wheat bran cereal, ground in food processor 1 c. all-purpose flour 1/4 tsp. baking powder 2 eggs 1/3 c. sunflower oil 1 c. canned pumpkin 2/3 c. whole wheat flour 1 1/4 c. sugar 1 tsp. baking soda 1/2 tsp. each of nutmeg, salt and cinnamon 1/2 c. orange juice 1/2 c. pecans, chopped Mix the first nine ingredients well. Add the remaining ingredients and stir. Pour into a greased and floured 9 x 5 x 3 inch loaf pan and bake at 350 degrees for one hour or until done. Toothpick will come out clean and bread will pull away from the side of the pan. Cool 10 minutes before removing from the pan. Yield: One loaf |
