HUNGARIAN NUT ROLLS | |
9 c. all-purpose flour 1 1/2 tsp. salt 1 c. sugar 6 egg yolks, slightly beaten 2 c. milk, scald and let cool 2 packets yeast mix with 2 tsp. sugar and 1/4 c. warm water (about 113~ to 115~) 1 lb. butter (using all butter is very rich; I use half butter, but it does need part butter) Mix flour, salt and sugar together. Add butter and butter and mix like for pie dough. Add egg yolks to cooled milk. Make well in flour mixture and add milk mixture and yeast. Blend together with hands (do not over knead). Cover and place in refrigerator for few hours or overnight if desired. Make into 1/2 pound balls (will make 6). Filling for Six Rolls: 2 lb. English walnuts, chopped fine 2 c. sugar 1 tsp. vanilla or maple flavoring Mix ingredients together (I use brown sugar instead of granulated sugar; sometimes I vary my flavoring, making some with each). Roll each ball on floured board or pastry cloth. Spread generously with melted butter. Add chopped nuts and sugar mixture. Roll like for jelly roll. Place on greased cookie sheets, seam side down. Brush tops with 1 beaten egg mixed with 2 tablespoons water. Bake in 350°F oven for 25 minutes. I always make this recipe for Christmas. Truly delicious. Freezes well. |
