SALMON SQUARES 
2 c. cooked rice
2 eggs, beaten
1 sm. onion, chopped fine
1/4 c. green pepper, finely chopped
2 c. sm. curd cottage cheese
15 oz. can salmon, flaked, drained
2 tbsp. soy sauce
1 c. crushed soda crackers

Combine all ingredients except crumbs. Place into buttered 12x7x2 inch pan; sprinkle crumbs over top. Bake 40 minutes or until firm in the middle.

SAUCE:

3 tbsp. butter
3 tbsp. flour, heaping
1 1/2 c. milk
2 tbsp. pimento, chopped
4 oz. can sliced mushrooms
1 tsp. seasoned salt
1 1/2 c. cooked peas

Cook mushrooms in butter 5 minutes; stir in flour and salt. Add milk slowly and cook until smooth and thickened. Add peas and pimento. Cut casserole into squares and spoon sauce over each serving.
