QUICK LEMON CREAM CHEESE PIE 
1 (8 oz.) pkg. cream cheese
1 (3 3/4 oz.) pkg. lemon instant pudding mix
2 c. cold milk
1 (9 inch) graham cracker crust

Soften cream cheese by sitting out at room temperature for about an hour or place in microwave on 30% setting for a minute. Stir smooth. Add 1/2 cup of the milk, a little at a time, blending until very smooth. Add remaining milk and the pudding mix. Beat slowly with mixer set at low speed about 1 minute. Pour into crust and chill until set. To serve, top with cherry pie filling, if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
