BEER POT ROAST 
1/2 c. butter
1 onion, chopped
1/4 tsp. black pepper
1/2 tsp. salt
2 cloves garlic, diced
4 tbsp. Worcestershire sauce
1/8 tsp. celery salt
1 to 3 lb. chuck roast
1 (12 oz.) can beer
1 (12 oz.) Coca-Cola
1 (16 oz.) can whole new potatoes
1 (16 oz.) can baby carrots

1. Melt butter in a 5 to 8 quart heavy pot over medium heat.

2. Add onion and seasonings. Saute until onions are soft.

3. Place roast in pot and brown lightly on both sides.

4. Increase heat to high, add beer and Coke, and bring to a boil.

5. Reduce heat and simmer 30 minutes for each pound of meat.

6. Add potatoes and carrots. Cook for approximately 15 minutes over medium heat. Serves 4 to 6.
