STIR FRIED PEPPER SCALLOPS 
1 tbsp. oil
1 c. thinly sliced sweet red or yellow pepper
1 c. thinly sliced green pepper
1 c. thinly sliced onion
1 lb. sea scallops
1 tsp. sesame oil
1 tbsp. low-sodium soy sauce

Heat oil 1 minute. Stir fry peppers and onions until just cooked, 5 minutes. Remove, set aside. Stir fry scallops 3 minutes. Return vegetables to pan and toss with scallops. Add sesame oil and soy. Toss, cover and cook 1-2 minutes. Serve over Ramen noodles or rice.
