SQUASH CASSEROLE 
1 lb. yellow squash
1 sm. onion
2 carrots, sliced thin
1 stick butter
1 sm. pkg. Pepperidge Farm stuffing
1/4 lb. pizza cheese
1 c. sour cream

In small amount of water, cook carrots and onions 3 to 4 minutes. Add squash and cook 2 more minutes. Melt 1 stick butter (butter) and mix with Pepperidge Farm stuffing, set this mixture aside. Drain squash, onion and carrots, mix with cheese and sour cream.

In a casserole dish, put 1 layer of vegetable mix then 1 layer of stuffing mix. Keep layering the vegetable mix and the stuffing mix, you will have about 3 layers each. Bake at 350 degrees for 30 minutes.
