RITA'S GRAPE-NUT CAKE 
Very simple cake and very yummy! Rita Dashnaw Iloff's recipe.

1 cup grape-nut cereal
1 cup boiling water
1 1/2 cups all-purpose flour
1 tsp. salt
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 cup (1 stick) butter, softened
3/4 cup packed brown sugar
1/2 cup white sugar
2 tsp. vanilla
2 beaten eggs

Preheat oven to 350°F.

Place cereal in bowl and add boiling water. Let stand 10 minutes, stirring occasionally.

Sift flour, salt, baking powder, baking soda and stir well. Combine butter, sugars, eggs and vanilla. Mix well and add to dry ingredients then blend in cereal. Pour into greased and floured pan.

Bake at 350°F for 30 minutes or until toothpick comes out clean.

COCONUT TOPPING:

1/2 cup (1 stick) butter
3 tbsp. all-purpose flour
1 1/2 cups shredded coconut
1 cup chopped pecans
1 cup packed brown sugar
3/4 cup heavy cream

Melt butter. Add flour. Stir in shredded coconut, chopped pecans, sugar and heavy cream. Boil on low for a good 20 minutes until it forms a ball.

Pour on top of warm cake and place under broiler keeping a close eye on it until it looks toasty. Be sure to watch it as it will burn very easily.
