NANNY'S GINGERBREAD 
2 c. cake flour
1 tsp. baking powder
1/8 tsp. baking soda
2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. salt
1/3 c. butter OR shortening
1/2 c. sugar
1 egg, well beaten
2/3 c. molasses
1 c. sour milk
Coconut (optional)

Sift flour once, measure and add baking powder, soda, ginger, cinnamon and salt and sift together 3 times. Cream butter or shortening thoroughly. Add sugar gradually and cream together until light and fluffy. Add egg, molasses and coconut. Add flour alternately with milk, a small amount at a time. Beat after each addition until smooth. Bake in greased 8 x 8 x 2 inch pan at 350 degrees for 30 minutes.
