BARBECUED SHRIMP WITH SPICY RICE | |
1 lb. large shrimp, peeled & deveined vegetable cooking spray 4 metal or wooden skewers 1/3 cup barbecue sauce (your choice) Preheat broiler or prepare outdoor grill for cooking. On each of 4 metal or wooden skewers, thread shrimp. If broiling, coat broiler rack with cooking spray. Place shrimp on broiler rack or cooking surface of grill about 4-5 inches from heat sauce. Brush with barbecue sauce and cook 4 minutes. Turn skewers over and brush with remaining barbecue sauce. Broil 2-4 minutes or grill 4-5 minutes longer, until shrimp are pink and cooked through. To serve, accompany with spicy rice. Serves 4. |
