8 slices crisp fried bacon 1/3 c. shredded Monterey Jack cheese 1 c. chopped tomato 2/3 c. chopped onion 2 tbsp. chopped parsley 1 pie crust shell 1 egg 2/3 c. evaporated milk 1 tomato, thinly sliced 1/3 c. shredded lettuce Preheat oven and baking sheet to 350 degrees. In small bowl, combine half the bacon, cheese, chopped tomatoes, onion and parsley. Spoon into pie shell. Beat egg with milk. Slowly pour over bacon mixture. Arrange sliced tomato on top of pie. Bake on preheated baking sheet for 30 minutes or until pie crust has browned. Let stand 15 minutes; top with shredded lettuce and remaining bacon; serve. |
