MANICOTTI
12 large manicotti shells
4 c. shredded Mozzarella cheese, divided
2 c. Ricotta cheese
2 tbsp. dried basil
1 (26 oz.) jar your favorite spaghetti sauce, divided
1/2 c. grated Parmesan cheese

Preheat oven to 350°F. Spray a 13 x 9-inch baking dish with nonstick cooking spray.

Cook pasta according to package directions. Drain pasta and rinse in cold water. Let pasta dry on paper towels. Combine 3 cups of the Mozzarella cheese with the Ricotta cheese and basil. Mix thoroughly. Using a teaspoon, stuff pasta shells with the cheese mixture. Spoon 2 cups of the spaghetti sauce into the prepared baking dish. Arrange pasta shells over the sauce. Pour the remaining spaghetti sauce over the pasta shells and sprinkle with the remaining Mozzarella cheese.

Bake manicotti in preheated oven for 15 minutes and then sprinkle with the Parmesan cheese and bake 10 minutes longer.
