SPEEDY VEGETABLE BEEF STEW 
2 lbs. beef chuck, cut into cubes (1 inch)
2 tbsp. fat
Salt and pepper
3/4 tsp. paprika
1/4 tsp. basil
1 (12 oz.) can vegetable juice cocktail
1 c. sliced onions
1 c. celery slices
6 whole carrots (med.)
6 whole potatoes (med.)

Brown meat into hot pressure pan (15 minutes). Add seasoning, vegetables and juice. Cook at 10-15 pounds pressure 10-12 minutes. Cook pan normally (5 minutes). Thicken stew, if desired. Makes 4-6 servings.
