POTATO CROQUETTES 
2 c. mashed potatoes
1/2 tsp. salt & pepper
1/2 tsp. baking powder
1/4 c. milk
1 egg yolk
2 tbsp. flour

Mix all ingredients with fork until light. Shape as for croquettes. Roll in dried bread crumbs. Dip in egg yolk mixed with teaspoon water. Roll in bread crumbs again and fry in deep hot fat, 385 degrees until brown. Drain on paper towels. Nuts can be added for extra flavor.
