HELEN'S QUICHE 
2 sticks butter
10 rounded tbsp. flour
3 scant c. milk
Salt and pepper
10-12 eggs, separated
2-3 c. chopped ham
1 c. each chopped Cheddar, American, Gruyere cheese
3 uncooked pie shells (frozen)

Melt butter in heavy pan, then add flour by tablespoons, mix well. Add milk, salt and pepper. Cook over low heat, stirring constantly until thickens. Then add 10-12 egg yolks, one at a time, stirring well after each addition. Add ham and cheese. Beat egg whites until stiff. Fold egg whites into egg mixture. Spoon into shells. Bake immediately at 350 degrees for 35-40 minutes until puffed and done OR cover and freeze - bake at 375 degrees for 45-50 minutes.
