CRUSTLESS QUICHE 
3 1/2 c. Cheddar cheese, grated
3 1/2 c. Swiss cheese, grated
3 bunches green onions, including tops (finely chopped)
3 3/4 qts. milk
Biscuit mix (recipe follow)
2 1/2 doz. eggs (30)
1 1/2 tsp. salt
1/2 tsp. pepper
1 3/4 tsp. dry mustard
1 1/2 tsp. dill weed (optional)
Diced ham or crisp cooked bacon (crumbled) or cooked bulk sausage

Grease 2 large stainless steel pans. Sprinkle the ham or bacon or sausage, onions and cheese evenly over the bottom of the pans.

Beat remaining ingredients together until blended. Pour into pans. Bake 350 degrees 50 minutes to 1 hour or until knife comes out clean. Let stand 5 minutes before cutting.

BISCUIT MIX:

4 1/2 c. flour
1/2 c. dry milk
3 tbsp. baking powder
2 tsp. salt
1 c. shortening

Blend together with a pastry blender or with two knives until the size of peas. Serves 50.
