SALSIFY CASSEROLE | |
3 c. salsify, partly cooked 2 c. crushed soda crackers 4 tbsp. butter 1 1/2 tsp. salt 1/2 tsp. pepper 3 c. rich milk Using a greased baking dish, add a layer of salsify and sprinkle with salt and pepper. Add a layer of cracker crumbs. Continue to add layers until contents are used, reserving crumbs for top layer. Pour milk carefully over ingredients. Dot with butter. Bake at 350 degrees for 30 minutes or until it becomes bubbly. Serves 6. A local menu of 100 years ago included salsify, a root vegetable also called oyster plant. In the fall of the year you take it out of the ground and store it along with other root crops. In the modern world, clean the salsify, cut in small pieces, blanch, and freeze. |
