SWEET POTATO PIE 
1 c. cooked, mashed sweet potatoes
1/3 c. butter, melted
2 eggs, well beaten
1/3 c. milk or half and half
1/2 tsp. baking powder
Pinch of salt
1 tsp. ground nutmeg
1 tsp. pure vanilla extract
1 c. sugar (1/2 may be used, with a good result)
1 unbaked 9" pie shell

Combine sweet potatoes with all ingredients (except pie shell), blending well with electric mixer. Pour mixture into pie shell. Bake in preheated oven at 400 degrees about 30 minutes or until golden and puffy. Serve alone or top with sweetened whipped cream.
