3 c. flour 1 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt (optional) 1 tbsp. cinnamon 1 c. chopped pecans 3/4 c. vegetable oil 3 eggs, slightly beaten 2 c. sugar (substitute 18 pkgs. Sweet & Low) 2 c. peeled, grated pears 2 tsp. vanilla Combine first six ingredients in large bowl. Make a well in center and add oil, eggs, sugar, pears and vanilla. Stir just until moist. Put into 2 greased loaf pans. Bake at 325 degrees for 1 hour and 15 minutes or until tests done. |
