FAST(ER) SMOKED SALMON | |
1 lg. (46 oz.) can pineapple juice 2/3 c. salt (thin fillets need less) 1/3 c. brown sugar 1/2 tsp. pepper 1 tsp. liquid smoke (optional) Marinate fish fillets for 12 hours in the above marinade. Stick marinated fish in oven for 30 minutes at 250-300 degrees. Watch closely. Remove from oven, put on smoker rack and smoke for 4 hours plus. Baking first in the oven cuts down on smoking time and the fish stays moist. Refrigerate after cooling. |
