CUCUMBER RELISH 
2 qts. green cucumbers, chopped
6 med. onions, chopped
1 lb. sugar
1/8 tsp. cayenne pepper
1 tsp. black pepper
3 tbsp. salt
1 qt. vinegar (white 5%)

Peel and seed cucumbers before chopping. Mix onions and cucumbers and let drain for 1 hour. Add the other ingredients and mix thoroughly and pack in glass jars and seal. (No cooking.) Add green and red peppers, if desired. Ready to use in about 3 weeks. Very crisp.
