POTATO ROAST 
3-4 med. size potatoes, grated
1 lg. onion, grated
1/2 c. chopped celery
2 tbsp. Sovex or Vegex, melted in 1 c. hot water
3 tbsp. oil
1 c. chopped walnuts
2 beaten eggs (optional)
Salt, garlic salt & sage to taste
1 tsp. Postum in 1/4 c. hot water to darken roast

Mix all together, pour into oiled casserole and bake 40 minutes at 375 degrees. Garnish with parsley; serve with ketchup. May be topped with grated cheddar cheese before baking.
