HERB DUSTED SAUTEED WHITE FISH 
Fish is a healthy dietary choice, but it doesn’t have to be boring says Carol Stephenson from Caribbean Flava. Just cheer it up by dusting the raw fish in a "Flava" inspired mix of herbs and spices.

4 white fish fillets
freshly squeezed lemon or lime juice
wedges of lemon or lime
sunflower oil (for frying)

SEASONED FLOUR:

1 cup all-purpose flour
1 tsp. dried thyme
1 tsp. dried parsley
1 tsp. fresh chopped dill
1/2 tsp. celery salt
1/2 tsp. black pepper
1/2 tsp. garlic powder
1/4 tsp. paprika (optional, if you’d like a tiny bite to the flava!)

Marinate 4 white fish fillets in freshly squeezed lime juice for at least half an hour.

Coat the marinated fish in your mixed "flava'd" flour.

Heat a small amount of sunflower oil in a frying pan, ensuring that it is hot enough to make the fillets sizzle, but not smoke.

Carefully place the dusted fillets in the oil without splashing. Fry gently for a few minutes on both sides, until the fish is a golden brown.

Serve with new potatoes in butter and parsley, roasted squash and green salad.
