GEM SIZE CHEESECAKES 
2 lg. cream cheese
3/4 c. sugar
3 egg yolks
3/4 c. sour cream
2 1/2 tbsp. sugar
1 tsp. vanilla

Mix cream cheese and 3/4 cup sugar. Add egg yolks. Fill lined miniature muffin tins 3/4 full. Bake 15 minutes at 350 degrees. Cool 5 minutes.

Fill sunken area with following mixture: 3/4 cup sour cream, 2 1/2 tablespoons sugar, and 1 teaspoon vanilla. Mixture can be put in oven to melt sugar. Top with a pecan half. Serve cool. Can be frozen.
