SWEET CHILIES RELLENOS | |
3 lbs. cubed beef or ground beef 1 c. raisins 3/4 c. sugar 2 tsp. cinnamon 1/8 tsp. black pepper 1/4 tsp. ground cloves 2 c. chopped green chili 1 c. nuts, chopped (pecans or pinon) 1 egg, beaten 3/4 c. flour 3 eggs, separated 1 tsp. flour 1/8 tsp. salt SYRUP: 1 c. sugar 1/2 c. brown sugar 1/2 c. water 1/4 tsp. cinnamon Cover meat with water and simmer until tender, about 1 hour. Drain meat and shred by hand or grind coarsely. (If ground beef is used, brown and add 1 tablespoon flour to thicken.) Combine beef with raisins, sugar, spices, chili, nuts and 1 beaten egg. Form into 2 inch oval croquettes; roll each croquette in the 3/4 cup flour until lightly coated. Beat egg whites until stiff; fold in yolks beaten with 1 teaspoon flour and the 1/8 teaspoon salt. Dip each floured croquette into egg batter. Fry croquettes, 1 or 2 at a time, in 2 inches of hot (420 degree) oil until golden brown. Drain on paper towels and serve warm with the syrup poured on top. To make the syrup, caramelize white sugar in pan. Add brown sugar and water. Simmer. Add cinnamon. 20 croquettes. |
