MEXICAN CHICKEN SALAD | |
4 whole boneless chicken breasts (8 halves), poached, skinned and cut into 1/4 inch strips 2 ribs celery, minced 4 scallions, sliced (white part and two inches green) 1 jalapeno pepper, minced 1 sweet red pepper, cored, seeded, diced 1 clove garlic, crushed or mincedc. grated Cheddar cheese 1 c. (or as needed) mayonnaise Juice of 1 lime 2 tsp. ground cumin 2 tsp. chili powder Salt and freshly ground black pepper to taste Avocado slices Place chicken, celery, scallions, jalapeno pepper, red pepper, garlic and cheese in a mixing bowl and toss to combine. Mix mayonnaise, lime juice, cumin and chili powder in a small bowl. Gently fold mayonnaise mixture into chicken mixture, adding more mayonnaise if needed to blend the salad well. |
