CLARA'S PINEAPPLE CANDY 
1 (15 oz.) can pineapple
4 c. sugar
4 env. Knox unflavored gelatin
1 c. water

Drain pineapple saving juice. Heat pineapple in heavy saucepan. Add sugar. Boil 3 minutes. Add pineapple juice. Boil 3 minutes. Add softened Jello that was dissolved in the 1 cup water. Boil 10 minutes. Pour into glass baking dish, 8"x11". Next day, cut into small squares. Roll in sugar. Let set uncovered.
