CHEESE CAKE CUPCAKES 
3 (8 oz.) pkg. cream cheese, room temperature
5 eggs
1 c. sugar
1 tsp. vanilla

Mix with mixer until smooth. Fill with the small or large cupcake papers. Bake in a 350 degree oven for 22-25 minutes for small cupcake or 27-30 minutes for the large cupcakes.

TOPPING:

1 c. sour cream
1/4 c. confectioners' sugar
1 tsp. vanilla

Mix and keep cool until ready to use. Dollop a top each cupcake and top with a dab of pineapple preserves.
