BARM BRACK BREAD 
This is a traditional Irish farm-style bread. Some or all of the white flour may be substituted with whole wheat flour or oat flour, if desired.

1 lb. mixed raisins, Craisins or dried fruits
1 cup dark brown sugar
1/2 cup rum or tea
1 egg
2 cups sifted flour
1 teaspoon baking powder
1/4 teaspoon salt
4 tablespoons unsalted melted butter

Preheat oven to 325°F. Spray 2 8-inch loaf pans with non-stick spray. Line bottoms with parchment paper, and spray the parchment. (Alternatively brush with melted butter or shortening).

Use mixed dried fruits (chopped into raisin-sized bits), Craisins, Goji berries, or raisins. Drain well and add sugar and rum or strong tea. Cover and let stand for 24 hours. Pour off the liquid and reserve.

Add the egg to the fruit and stir well. Add the dry ingredients alternately with the fruit soaking liquid and melted butter, beginning and ending with the flour mixture.

Note: Depending on the fruit used, more or less of the liquid may be soaked up. If batter seems very dry, add a few extra tablespoons of liquid, as needed.

Transfer half of the batter to each prepared pan.

Bake in preheated oven for 60 minutes or until a wooden pick inserted in center comes out nearly clean. Invert onto a wire rack to cool. This may be drizzled with some Confectioners Icing, if desired.

When cooled, slice into very thin slices.
