COLD LEMON SOUFFLE 
2 c. boiling water
1 (6 oz.) pkg. lemon gelatin
2 (7 oz.) bottles lemon-lime carbonated drink
Rind of 1 lemon, grated
Juice of 1 lemon
2 c. heavy cream, whipped
Fresh strawberries or raspberries

Pour 2 cups boiling water over 1 (6 ounce) package lemon gelatin. Stir until dissolved. Add 2 (7 ounce) bottles lemon-lime carbonated drink, rind of 1 lemon (grated) and juice of 1 lemon. Chill until slightly thick, then beat until foamy. Fold in 2 cups heavy cream, whipped.

Turn into 2 quart souffle dish. Chill until firm. Serve with fresh strawberries or raspberries.
