BEEF AND ZUCCHINI | |
1 lg. tomato 1 med. onion 4 sm. zucchini 2 tbsp. butter 1 lb. ground sirloin 1/2 tsp. salt 1/4 tsp. black pepper 1/4 tsp. chili powder, optional Grated Parmesan cheese Italian-style bread 3-4 dashes Tabasco sauce Wash and chop tomato. Peel and chop onion. Wash zucchini, trim off any blemished skin and cut into very thin slices. Set skillet temperature at 350 degrees and put in butter. When butter has melted, add meat and cook, stirring, until no longer pink. Add tomatoes, onion, and zucchini. Season with Tabasco, salt, pepper and chili powder and stir to blend. Cover and cook until zucchini is crisp-tender, about 10 minutes. Sprinkle each serving generously with grated Parmesan cheese and serve with thick slices of crusty Italian- style bread. Yield: 2-3 servings. |
