EGGLESS EGG SALAD 
1 (10.5 oz.) tofu, firm, drained
1 tsp. vinegar
2 tsp. mustard
1/2 tsp. turmeric
2 tbsp. celery, chopped
2 tbsp. onion, chopped
1 tsp. parsley, chopped
Dash of paprika

Crumble tofu into a small bowl. Add remaining ingredients and mix thoroughly. Refrigerate 30 minutes to allow flavors to meld. Serve inside pita bread with fresh greenery or try stuffed in a tomato.
