CARROT CAKE (ENGLAND) 
2 c. flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
Dash of salt
1 1/2 c. salad oil
4 eggs
1 tsp. vanilla
3 c. raw grated carrots
1/2 c. raisins
1/2 c. chopped nuts

Sift dry ingredients three times. Add oil slowly. Beat 8 to 10 minutes. Add eggs one at a time. Stir in vanilla. Fold carrots into flour mixture. Bake in greased floured loaf pan at 350 degrees for 50 minutes.
